Belle and Alabama Terroir

Belle is our gal. She is the lead goat with all the spirit that goes into the fantastic goat cheese we craft at Belle Chevre. And a large part of what makes her so special is the place, the land on which she roams. You see, she is a Southern Belle from Alabama. The Southern Landscape, or terroir as the French call it, help shape her character and our cheese.

Terroir is a French word for earth or soil, used in the special sense of "place", which includes localized climate, soil type, drainage, wind direction, humidity and all the other attributes which combine to make one location different from another.

Alabama's Limestone County has a very rich soil content that affects everything - the sultryness of her attitude and most importantly, the milk she produces. Alabama is a great part of what makes Belle Chevre so special. No other cheese can taste the same as ours.

Belle and all the goats that contribute their milk to Belle Chevre are well-cared for on a gentle landscape and roam free and happily. We at Belle Chevre support local dairies and work closely with them to make sure that all our Belle's are happy and graze on the best grasses to produce the flavor profile we are so proud of.
