Belle lived the idyllic life of a carefree kid. Born into a proud family of French Pyrenees dairy goats, her only concern was to frolic in the fields and play with the other goats. But as she grew older she became aware of her destiny -- to provide only the best milk, so that Belle Chèvre might produce the highest-quality goat cheese. Not a problem. Belle's a natural. And not to bra-a-a-a-ag, but now that she's in Alabama, she dominates the competition.

They’re just as passionate as Tasia, if not more so –– it’s a given when your family has been working with goat cheese for three generations. To them, making cheese is an act of fervent devotion. As a matter of fact, they claim to think only good thoughts while their hands are at work. Something about “finding the exalted planes of immaculate fromage blanc.” Hey, who needs to be king of the hill when you’re reaching for the skies?
